Chamomile Basil Ice Cream

I will fully admit I did not expect to love this ice cream as much as I do. You see, I had plans for it. Great plans. Grand plans even. I had plans for sundaes and cobblers, pies and banana splits. Ice cream cake with pistachio ice cream and strawberry ice cream!
I still do. I just don’t have any more of this particular ice cream for said plans. Woe is me, I have to make another batch. Such a hardship. And the recipe for the sundae is coming as soon as I have made more ice cream! What happened is that I made the ice cream, scooped it into the frozen coupe and then just wanted a little bite. Just to test it you know. And then one bite let to another and all of a sudden I had finished the entire coupe.
And then later that night I made another coupe, drizzled on some of the basil infused caramel from the More Than Sweet cookbook, a good dollop of chamomile infused cream (leftovers from another recipe test) sprinkled on some toasted almonds and…well. Let’s just say we finished the whole tub that night. I have no regrets.
The floral and fruity honeyed flavour of chamomile with the sweet, herbaceous, slightly spicy basil is a very, very strong contender for favourite ice cream flavour ever. Up there with pistachio and strawberry. That particular ice cream cake recipe is coming too in the next few weeks.
