I love a good chocolate ice cream - both the rich and decadent and the milky, luscious kinds. Todays recipe is neither. In the words of Robert de Niro (in the epic movie The Deer Hunter) “Stanley, see this? This is this. This ain’t somethin’ else. This is this.”
This being a chocolate sorbet. Elegant rather than decadent. Refreshing despite being intensely chocolatey. Think chocolate soufflé rather than pot de creme. This is this.
I love the subtle floral and bitter orange flavour with the spicy bite of the pepper, but you can obviously just leave out the orange blossom water and black pepper. Or you can substitute with any and all spices, herbs, teas or flowers you love.
