Rum Raisin Ice Cream

I have been attempting to make a good rum raisin ice cream for a good few years now and while I have gotten close, I never really landed on one I really, really liked. I wanted it to be more than a vanilla base with rum soaked raisins, not that there is anything wrong with that - set a scoop in front of me, and I will devour it in a heartbeat! I just wanted to amp up the yumminess and, well rumminess. I did make a very lovely rum infused ice cream with rum soaked raisins, and while it was nice I wanted something a little different with the custard having a more supportive flavor than a hint of the alcohol.
My recipe has a classic custard made with toasted sugar (you can use cane sugar, but I much prefer the rich caramelised flavour of the toasted sugar!) infused with a little vanilla, cinnamon and nutmeg to highlight the flavour of the rum while also being delicious all on its own. I also made the custard with a tiny splash of orange blossom water - I loved that version, but other eaters preferred the ice cream without more.
