I love vanilla. I have never understood why it has been used to describe something plain, bland or boring - at least when it comes to real vanilla beans. Can anyone name a sultrier aroma in food than vanilla? No?
Toasting vanilla beans adds a smoky depth of flavour and enhances the rich caramel and dried fruit aromas in the beans. If you don’t feel like burning your vanilla beans, or you are making a Tahiti vanilla ice cream simply skip that part.
